This is a very hearty meal – I mean any recipe with Bacon is awesome 🙂 This dinner has it all! Meat, potatoes, veggies, and cheese. Soon to be a family favorite. We like to make both trays and with the 6 of us we eat about 1 1/2, which leaves a nice portion for lunch the next day.
Freezer Chicken, Broccoli, Bacon, and Potato Recipe
The big thing to remember about this meal or any freezer meal in tins, is to make sure to cover it well. I tripled the foil layers over the top, rotating each layer so the longer excess bunch isn’t on just 2 sides. After your first layer of foil, turn your tray a 1/4 turn and cover again. We repeat a 3rd time to give it strength.
For all freezer meals make sure to label your foil top with the name of the recipe, cooking instructions, and prep date. Freezer meals can be frozen for up to 3 months.
- 5 cups diced red potatoes blanched – (click here to read how to blanch vegetables)
- 3 cups diced boneless skinless chicken breast
- 2 cups fresh broccoli, blanched (or frozen broccoli)
- 1/2 cup cooked crumbled bacon (we love bacon)
- 1/4 cup sliced onion, blanched
- 2 cups shredded cheddar cheese
- 1 teaspoon garlic powder
- ½ cup heavy cream
- 2 tablespoons butter
- Salt and pepper
- Grease 2 – 8×8 foil baking pans.
- Layer ingredients starting with 1/4 of potatoes, 1/4 of chicken, 1/4 of broccoli, 1/4 of bacon, 1/4 onion and 1/4 cheese in each pan.
- Season with salt, pepper, and garlic powder.
- Repeat the layers and seasoning.
- Pour 1/4 heavy cream over ingredients and cut 1 tablespoon pieces of butter all over the top on each pan
- Cover tightly with foil, label with name of recipe, cooking instructions, and prep date (Can freeze up to 3 months), freeze with bag containing ½ cup of cheese.
- Allow to defrost overnight in the refrigerator.
- Bake at 400 degrees covered for one hour or until chicken is cooked through and potatoes are tender. (Usually is closer to 90 minutes)
- Sprinkle with remaining cheese and bake uncovered for 5-10 minutes until cheese is melted.
We serve this meal with a small side salad.
Here are some other awesome things about freezer-to-crockpot meals:
- Most of these meals require no cooking ahead of time, so that means the recipes are very easy to prep.
- The meals cook for the first time out of the freezer so they don’t taste like leftovers (BUT leftovers are okay right?!)
- For us that coupon, we can take advantage of all the sales and freeze a couple at a time. (Most freezer meals will last for at least 3 months.)
